BBQ Sauce Chicken

Last night and tonight I fixed up some chicken…  I love chicken.  Like, seriously, I love chicken.  I would marry chicken if I wasn’t already married.  Okay, I wouldn’t actually marry chicken.  But I love chicken.

Any who…  I figured that I would inflict the recipe on you!

Recipe: BBQ Sauce Chicken

Summary: Simple saucey chicken in one dish!

Ingredients

  • chicken breasts (boneless skinless)
  • BBQ sauce
  • Slap Ya Mama seasoning (optional)

Instructions

  1. Preheat oven to 450°.
  2. Spray a glass dish with non-stick cooking spray.
  3. Put chicken in dish.
  4. Pour one third of a bottle of BBQ sauce over the chicken. Make sure that all sides of the chicken are covered.
  5. Sprinkle a little Slap Ya Mama seasoning for extra bite.
  6. Put in oven for 40 minutes.

Quick notes

Use your favorite BBQ sauce. I used a Hickory Brown Sugar sauce because that’s what was in the cabinets, but I’ll be trying this again with different flavors. The Slap Ya Mama seasoning is optional, but adds a little extra spice to the chicken. Jaime and I both preferred the chicken without the additional seasoning.

I realized after posting my last recipe that not everyone would know what Slap Ya Mama seasoning is.  For the record, it is not the stuff that flies from your mother when you slap her as hard as you can across the face.  That would be blood.  And assault.  Slap Ya Mama has a home at http://www.slapyamama.com/ and you can order some of this amazing stuff from their site.  {Warning:  Buy at your own risk.  I am not responsible for your future disgust at foods that are improperly seasoned after you taste the awesomeness that is Slap Ya Mama.}

Last night I didn’t prepare any sides, but tonight I cooked mashed potatoes (from a box, because I’m awesome) that didn’t get eaten.  Jaime and out friend Don went to pick up some Starbucks and decided to get food from KFC instead.  They picked up mashed potatoes and macaroni, so we had those sides.

Ummm…  I think that’s all the food related stuff for now.

No wait, I also made two pitchers of sweet tea while I was being domestic.  I love sweet tea.  Even more than I love chicken!

Lishy's Baked Chicken

Yesterday evening I cooked dinner for my husband.  This is extremely unusual, I know.  So, I’m sharing the recipe!  I sort of adapted what my mom told me to do since her instructions left my first attempt kind of bland.  (Sorry, mom!)

Naturally, I named my yummy chicken after myself!  :-p

Recipe: Lishy’s Baked Chicken

Summary: An extremely simple recipe for yummy baked chicken!

Ingredients

  • 2 sticks of butter
  • 1/3 cup Worcestershire sauce
  • 1 tablespoon lemon juice
  • Slap Ya Mama seasoning
  • thawed chicken pieces

Instructions

  1. Put the butter in a microwaveable bowl and melt.
  2. Add the Worcestershire sauce and lemon juice to the melted butter and mix. (Add more Worcestershire sauce or lemon juice if needed.)
  3. Sprinkle some Slap Ya Mama seasoning over the mixture and stir in.
  4. After rinsing chicken, put in zip lock back, pour in mixture, and refrigerate for at least 30 minutes. Let it sit longer to soak in more flavor.
  5. Preheat oven to 450°.
  6. Spray glass baking dish with non-stick cooking spray.
  7. Pour the chicken and butter mixture into the glass baking dish.
  8. Sprinkle a small amount of Slap Ya Mama’s over the chicken.
  9. Bake for at least 40 minutes or until internal temperature of chicken at thickest part is 180°.

Quick notes

This recipe has not been timed for a whole chicken.

Preparation time includes the time you’re going to let your chicken marinate in the butter mixture.

Variations

The amount of Worcestershire sauce and lemon juice is variable depending upon tastes. Slap Ya Mama’s can be substituted with your preferred seasoning.

You can alternatively put the chicken into the bowl with the butter mixture, but it doesn’t soak up the flavor as well that way.

I was feeling a bit confident after my chicken came out of the oven and decided to experiment a bit with some canned creamed corn.  I threw two cans into a -  Well, let me just share my recipe.

Recipe: Lishy’s Awful Corn Experiment

Summary: Do not try this corn! Ever! You’ve been warned!

Ingredients

  • 2 cans of creamed corn
  • Worcestershire sauce
  • Slap Ya Mama’s seasoning

Instructions

  1. Empty both cans of corn into a microwaveable glass bowl.
  2. Add a splash of Worcestershire sauce.
  3. Add a dash of Slap Ya Mama’s seasoning.
  4. Stir thoroughly.
  5. Microwave for 4 minutes.

Quick notes

Apparently, when a can of corn says “season to taste” it doesn’t mean the same thing in the South as it does everywhere else. When we see “season” we think Tony’s and Slap Ya Mama’s. This is where I went wrong. The can apparently meant plain old salt and pepper – yes, I know that technically those are seasons, but not down here!

Also, I added the Worcestershire sauce because I like the way it smells. Just an FYI in case you were curious. ^_^

Variations

Leave out the Slap Ya Mama’s and this might be palatable.

I’m going to give the corn another try in the future with just the Worcestershire sauce and maybe some salt and pepper.  For now, though, I’m going to hold off on these crazy experiments!

For the record, this meal represents the first time I’ve ever altered a recipe without asking my mom (or another experienced cook) for advice and instructions.  I’m just pleased that the main course came out so well.  ^_^

Recipe – Saltgrass Steakhouse Tortilla Soup

My dad made this new soup for dinner tonight. It was amazing, so I figured I would share the recipe with you imaginary peoples!

This is also my first time using the hRecipe plugin that I installed ages ago!

Anyways, it was delicious and I absolutely loved it. I added the shredded cheese to mine and it made it just perfect!! You should give it a try and if you have any questions, just ask and I’ll do my best to answer them. :-)

Recipe: Saltgrass Steakhouse Tortilla Soup

Ingredients

  • 4 oz. unsalted butter
  • 4 oz. extra virgin olive oil
  • 2 oz. bacon grease
  • 2½ oz. green bell pepper
  • 8 oz. yellow onions
  • 4 oz. celery
  • 4 oz. carrots
  • ½ bunch cilantro
  • 1 tsp ground white pepper
  • 1 tsp cracked black pepper
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp Lawry’s seasoned salt
  • 1 tsp. chopped fresh garlic
  • 5 oz. white corn tortillas
  • 2½ quarts chicken stock
  • 12 oz. tomatoes
  • 10½ oz. corn kernels
  • 18 oz. grilled boneless chicken breast
  • For the roux:

  • 3½ oz. unsalted butter
  • 3½ oz. all purpose flour

Instructions

  1. Peel, clean, and wash all vegetables.
  2. Place bell pepper, onions, celery, carrots, and cilantro in food processor and chop fine.
  3. Heat soup pan over medium-high heat for two to three minutes.
  4. Add butter, olive oil, and bacon grease.
  5. When butter has fully melted, add the vegetable mix, white pepper, black pepper, chili powder, cumin, garlic, and seasoned salt.
  6. Cook until onions are translucent and slightly brown.
  7. While vegetables cook, chop tortillas in food processor until very fine.
  8. Add tortillas to pan and cook until soft.
  9. Add chicken stock and bring to a boil.
  10. While the soup is coming to a boil, prepare the roux.
  11. Heat a six to ten inch saute pan over a medium to low heat.
  12. Add the butter and melt fully.
  13. Add the flour and mix thoroughly using a wire whisk.
  14. Cook roux for two to three minutes stirring occasionally.
  15. Add roux to soup mixture along with the grilled chicken, Reduce heat and simmer for 15 minutes.
  16. Finely chop tomatoes in food processor.
  17. Add corn and tomatoes and simmer 10 more minutes.
  18. Serve with fried tortilla strips, shredded cheddar cheese, and pico de gallo if desired.
